6 large potatoes,
shredded
1/2 lb bacon, diced very small
3 tbsps butter
1 onion, chopped
salt, pepper and nutmeg to taste |

prepare ~
Place onions and potatoes in a colander and squeeze it in
batches between your hands to get out as much liquid as possible.
Mix potatoes and onions with bacon and seasonings.
Heat butter in a pan until foamy and swirl to cover.
Lay the potato mixture into te pan and press to form a cake.
Turn down the heat and cook for 1/2 an hour covered, shaking
pan often.
Spread the rest of the butter on top and cook until golden brown.
