1/4 cup brown sugar
10 tbsps white refined sugar (for the dough)
4 tbsps white refined sugar (for the mixture)
1 cup white flour
1 cup maize flour ("Amido de milho" - Maizena)
1 egg
1 pinch salt
1 teaspoon cinnamon
6 medium apples (peeled and sliced)
1/2 cup raisins
1 cup butter
1/4 cup honey
1/2 cup pecans (chopped) - optional |
~ How to
prepare ~
Mix the
maize, the white flour, the white sugar, the salt, the egg and
the butter. Work with the dough until it becomes smooth.
Here is
a picture of the maize flour I use.
Spread
butter in a pie plate (or use vegetable cooking spray instead).
Cover the
pie plate with part the dough, streching it a little towards
the edges (you will fill it with the apple mixture later) and
bake it in the oven (low heat) for about 40 min. Save a small
part of this dough to make stripes that will cover the pie later.
Remove
it from the oven a little before it starts to beome golden brown
and make a few holes on the dough with a fork.
In a bowl,
mix the cinnamon and 4 tablespoons of white sugar. Add the sliced
apples to the sugar mixture. Mix it with a combination of honey
and brown sugar and stir in raisins. Mix. Gently put this apple
mixture on the pre-baked dough.
Cover it
with thin stripes made with the rest of the dough making vertical
and horizontal lines, pressing them gently against each other
and on the edges, so they won't fall appart when you cut the
pie. Spread a lightly beaten egg yolk on these stripes with the
help of a brush.
Bake it
for some more minutes, until the stripes on top are golden brown.
Serve it
with some more honey on top if you wish. Enjoy ! :o)
